50 ml California Dreamgin' Gin
15 ml Italicus
15 ml Chardonnay
10ml Dry Vermouth

HOW IT'S MADE
  • Stir and strain into a Nick & Nora glass over fresh ice.
  • Garnish with a cocktail onion on a pick, with a long, thin lemon peel
WHAT IT'S LIKE

The culinary element of the mushroom pairs phenomenally well with the wine, and the dry vermouth brings it to familiar territory as a gin martini variation, with the Italicus bringing some levity and complexity on the citrus-side of the flavour profile.

JAMES' TASTING NOTES

Walter D. K. Gibson was a prominent San Francisco businessman who claimed to have created the drink at the Bohemian Club in the 1960's. In its basic form it's just a Martini garnished with an onion instead of an olive. Here it's much groovier.
